Paweł Kaszubski
Head Chef
He began his journey in fine dining at Maddalena in 2013. He worked with us for a year and then decided to move on. He honed his culinary skills and techniques alongside, among others, Łukasz Budzik—now hailed as “Chef of Tomorrow” by Gault&Millau and recognized as the most promising talent in Polish gastronomy—as well as Witek Iwański. He then became Executive Chef at Vivian in Wrocław. Together with the restaurant, he earned his first Gault&Millau toque and a spot in the yellow guide to the best restaurants in Poland.
He repeated his success as Chef at the Jasna restaurant in Wrocław. Once again, he earned a toque and a place of honor in the Yellow Guide. He has been with us again since May 2019—first as sous chef and then, starting in January 2021, as head chef. Dedication, attention to detail, and meticulous care. Every chef who works under Paweł knows this.
Paweł Borejko
General Manager
General Manager of the restaurant. A bundle of energy, a wonderful husband, and a father of three. He is utterly dedicated to his work. It’s thanks to Paweł that every reservation is taken care of down to the last detail. No request from a guest is ever a problem for him.
For six years, he worked at the first 5-star hotel in Wrocław. There, he worked his way up from waiter to manager. He has been managing the restaurant at La Maddalena for twelve years.
Rafał Bajzert
Head Sommelier
Rafał is one of only a few people in Wrocław who can boast a third-level sommelier certification. Only the highest level—the fourth—remains for him to achieve. Perhaps we’ll be able to send him to a school near Vienna.
At Maddalena, there’s never a moment when there isn’t at least one sommelier in the dining room. Rafał has been with us for twelve years. And just like a certain important gentleman in Poland, he’s always learning. He knows more about wine than the owners combined.
