He started his adventure in serious gastronomy in Maddalena in 2013. He worked with us for a year and decided to move on. He honed his artistry and culinary techniques alongside, among others, Łukasz Budzik, today hailed as Chef of Tomorrow according to Gault&Millau, considered the most promising talent in Polish gastronomy as well as Witek Iwański. He then became Chef de Cuisine at Vivian in Wroclaw. Together with the restaurant, he won his first Gault&Millau hat and a place in the yellow guide to the best restaurants in Poland.
He repeated his success as Chef at Jasna restaurant in Wroclaw. Again the cap and an honorable place in the yellow guide. Since May 2019, he has been with us again. First as Deputy Chef and then from January 2021 as Chef. Pietism, detail, attention to detail. Every chef working under Paul knows this.
Pavel Borejko
General manager
General manager of the restaurant. A volcano of energy, a wonderful husband and father of three children. Devoted to his work unreservedly. It is thanks to Paul that every reservation is buttoned up to the last button. No request from the guests is a problem for him.
For six years he worked at the first 5-star hotel in Wroclaw. There he worked his way up from waiter to manager. At La Maddalena, he has been managing the restaurant for twelve years.
Rafal Bajzert
Chief sommelier
Rafal is one of a handful of Wrocław residents who can boast a third sommelier degree. Only the highest, fourth, is ahead of him. Perhaps we can send him to a school near Vienna.
There is not a moment in Maddalena that there is not at least one sommelier in the Hall. Rafal has been with us for twelve years. And like a certain important gentleman in Poland, he is still learning. He knows more about wines than the owners put together.
